Fit Club Tuesday - P90X!!

It is Tuesday and that means it is time for Fit Club!  Whoo-hoo!!!

Fit Club Workout:

Today's workout is P90X.  Over the weekend, I got to workout with Tony Horton.  He is so amazing and fun!  He looks great!  He is just as goofy in person as he is in his videos.  We tried some of the new moves that are in his new P90X MC2 videos that will be coming out in 2011.  All I can say is OUCH!  I am still sore this morning from Saturday's workout!

I was requested to do Kenpo X.  This is one of my favorite workouts and I certainly don't mind hosting it tonight!  If you are in the area, please come by the Community Center at 7 PM and workout with us and taste Shakeology!!!  You'll have fun and get to hear all the great news that came out this weekend!

Fit Club Recipe:

I recently received a copy of Easy & Delish Comfort Food - 123 Classic Recipes Your Family Will Love.  This is a great bookazine from delish.com that includes several recipes that will be a great addition to your holiday planning, plus I loved the section on roasting vegetables 101!

Pumpkin Chowder
from Country Living

3 tbsp extra virgin olive oil
2 leeks, trimmed of tough green tops and chopped
3 large garlic cloves, finely chopped
2 medium green bell peppers, chopped
2 1/4 lbs pumpkin peeled, seeded and cut into 1/2 by 1 inch thick pieces
1 1/2 tsp chopped fresh marjoram
1/4 tsp crushed red pepper
 2 bay leaves
1/4 tsp salt
1/4 tsp freshly ground black pepper
1 1/4 cups frozen corn
6 cups vegetable broth

1. Heat olive oil in a large pot or Dutch oven over medium heat.  Add leeks and cook until very soft, about 5-6 mins.

2.  Add chopped garlic and cook for about  mins.  Stir in green peppers, reduce heat to med-low and cook until peppers soften, about 8 more mins.  Add the pumpkin,  marjoram, red pepper bay leaves, salt, pepper, corn and broth and cook until pumpkin is tender, about 30 mins.

Each serving:  about 146 cals, 3 g protein, 22 g carbs, 6 g total fat ( 1 g sat fat), 3 g fiber, 0 mg cholesterol, 428 mg sodium

Discussion:  What is your favorite fall food?  I love soups.  So easy to make and filling and usually less calories.  Add in a salad and a good crusty bread and I am in!!
